Homemade Banana Protein Pancakes Recipe

I decided to go with something a little more lighthearted this week. Many of you know by now, I typically cover topics such as goal setting and personal development. Yet, I also know we can’t be our best selves without considering the foods we consume.

Jimmy and I are often looking for different ways we can make simple recipes from scratch. Making our food from simple ingredients allows us to see what exactly it is we are eating. Many of the boxed and processed items are so unhealthy for us. To look and feel our best, we often have to think outside the box literally and figuratively.

One of our favorite recipes (usually enjoyed on the weekends when we have a little more time) is homemade banana protein pancakes. When we prepare our food, we try to aim for a minimal amount of ingredients, but we still crave flavor. Also, because we eat a primarily vegetarian diet, we are always looking for new and creative ways to add healthy protein into the mix.

Here is how we make our homemade banana protein pancakes

What You Will Need:

1 banana (try to use one more on the ripe side, it will be sweeter)

2 eggs (can also do egg whites)

1 scoop plant-based protein powder (below is the one we are currently using)

½ tsp baking powder

1 tsp cinnamon

1 cup of rolled oats

1 cup non-dairy milk (almond / soy / macadamia / oat) or milk of your choosing

½ tsp of vanilla extract (optional)

Directions:

In a blender, mix together all of the ingredients until smooth.

Preheat griddle with oil or spray of choice on medium heat.

Pour mix onto griddle forming medium circles (about 2-3 heaping tablespoons)

Cook for 2 minutes or so until the edges start to bubble. Carefully flip over to the other side and cook for an additional 1-2 minutes.

Repeat with remaining batter

Finish with your favorite toppings (I use honey and fresh berries)
